Ingredients
- 3/4 oz dark rum
1/2 oz creme de bananes
4 oz pineapple juice
Combine in a highball glass filled with ice cubes.

1. Put the sherry, sugar, spices, and lemon juice into a large mixing bowl, and stir until well-blended. Leave to soak for at least half an hour.
2. Beat the cream until it is stiff. Fold in the chopped ginger. Chill thoroughly.
3. Before serving, divide into four serving bowls and top with crumbs of crystallized ginger and a shake of nutmeg.
Ingredients
Pour the gin, lemon juice, grenadine, superfine sugar and egg white into a cocktail shaker half-filled with cracked ice. Shake well, and strain into a highball glass filled with ice cubes. Fill with soda/sparkling water. Stir well, and serve.
